Instructions:

 

  • Over an open campfire or charcoal grill
  • Lay out each sheet of foil and butter the inside of the foil and form the sides of the foil into a sort of bowl to contain the water/wine from running out
  • Salt and pepper both sides of the fish
  • Add the ingredients to the foil packets. On each piece of foil, layer the fish, garlic, basil, tomatoes and liquid (water/wine/beer)
  • Seal the foil packets for cooking
  • Place foil pack over fire with fish closest to heat and cook for 10-12 minutes over medium heat of campfire or grill, until the fish flakes easily with a fork

Campfire Fish

Ingredients:

 

  • 4 pieces white fish striped bass, tilapia, flounder, cobia etc
  • Salt and pepper
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 4 large fresh basil leaves, chopped
  • 4 small diced tomatoes
  • 1 cup water or white wine
  • 4 sheets of aluminum foil
