Lay out each sheet of foil and butter the inside of the foil and form the sides of the foil into a sort of bowl to contain the water/wine from running out
Salt and pepper both sides of the fish
Add the ingredients to the foil packets. On each piece of foil, layer the fish, garlic, basil, tomatoes and liquid (water/wine/beer)
Seal the foil packets for cooking
Place foil pack over fire with fish closest to heat and cook for 10-12 minutes over medium heat of campfire or grill, until the fish flakes easily with a fork

Ingredients:
4 pieces white fish striped bass, tilapia, flounder, cobia etc
Salt and pepper
2 tablespoons butter
4 cloves garlic, minced
4 large fresh basil leaves, chopped
4 small diced tomatoes
1 cup water or white wine
4 sheets of aluminum foil
